Recipe: Loaded Banana Cookies

Yesterday, I made these cookies from the recipe I got from Tres (pronounced Tray) Prier Hatch’s book the “Miracle Pill 10 Truths To a Healthy, Thin, & Sexy”. Tres wasthe keynote speaker at Missouri’s TOPS State Recogition convention Where I graduated from being a TOPS member of my chapter to becoming a KOPS (TOPS is for take offpounds sensibly and KOPS is for Keep off pounds sensibly). I became a KOPS on September 1, 2011 and my first anniversary is comming soon. The cookies I made are delicious and healthy too and I made them even healthier by adding AIM’s Garden Trio (BarleyLife, Just Carrots, and RediBeets).
3/4 cup unsalted butter, 1 cup brown sugar (I used 3/4 cup), 1 egg, 1 cup mashed banana (about 2 large ripe bananas), 2 cups whole-wheat pastry flour (or regular whole wheat flour which is what I used), 3/4 cup cornmeal, 1/2 cup old-fashioned oats, 1 teaspoon soda, 3/4 teaspoon salt, 1 teaspoon cinnamon, 1/2 teaspoon nutmeg, 1/2 teaspoon cloves, 1-2 cups dried fruit (I used raisins and chopped prunes), 1 cup walnuts, chopped, 1-1&1/2 cups chocolate chips (I used carob chips) (optional), (I added the next three ingredients), 1 tablespoon Just Carrots, 1 tablespoon BarleyLife, 1-1&1/2 teaspoons RediBeets
Preheat oven to 375 degrees, and line baking sheet with parchment paper. I just put the cookies on the baking sheet parchment paper makes it easier to cleanup after.
Beat butter and sugar well, Add egg and beat till fluffy. Beat in mashed banana. I added the Just Carrots and I beat well. Then I added the BarleyLife and I beat well.The RediBeets were added and beaten well. Whisk together dry ingredients and add to butter mixture in two additions. Stir in fruits, nuts and chocolate chips. After the cookie dough is mixed well I like to my it in the refidge. Drop by tablespoon ont cookie sheets. Bake 10-12 minutes.
I absolutely loved these cookies and so did my kids and husband. I love it when food tastes great and gives me the nutrition my body needs! They were nutritious before and the Garden Trio made them even more so.
