BA’s Tortilla Diva

Heat a healthy whole grain tortilla 2-3 minutes in dry non-stick skillet.

Remove to plate and spread with your favorite hummus; then layer……

1 cup raw spinach

4-5 cherry tomatoes cut up fine

1/4 – 1/2 cup chopped raw veggies (zucchini, baby carrots, broccoli, jicama, etc)

Sprinkle with  a little parmesan cheese if desired, fold and eat.

DELICIOUS.  Remember to always use organic ingredients when possible.  My personal favorite hummus is Sabra, and their “Spinach-Artichoke” is scrumptious in this recipe.
