Healthy Nampaccino

1 cup almond milk (or less if you want it thicker)

1 cup ice cubes (or more)

1/2 tsp vanil la powder or 1 tsp vanilla

1 heaping tsp. AIM Cocoa Leaf Greens

1 tsp of Dandy Blend (or Roma, or Caffix)

6 dates

 Blend well in blender. Better than paying 4 bucks, healthier too, and pretty tasty, too!

Angel Fiber Muffins

  • 2 cups oat bran
  • 3/4 cup whole wheat flour
  • 2 tsp baking powder
  • 2 Tbsp Unflavored AIM Herbal Fiberblend®
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 cup raisins
  • 2 egg whites
  • 2 Tbsp canola oil
  • 1/3 cup honey
  • 3/4 cup skim milk
  • 1 tsp vanilla
  • 1 banana, mashed
  • 2 Tbsp AIM Just Carrots®

Preheat oven to 375 degrees. In medium bowl, combine dry ingredients. Add raisins, mix well. Combine liquid ingredients, mix well. Add to dry mixture, blend. Fill muffins tins and bake for 20 minutes.

Chocolate Coconut ProPeas Protein Balls

1 cup walnuts
1/2 cup pumpkin seeds
1/4 cup  cocoa powder (I used Hershey’s, but other brands work well, too.)
1/4 cup ProPeas powder
1 cup fresh pitted dates, about 10 (I found it best to soak them in warm water before adding, or you can add about one tablespoon of  water if you forget. )

Makes: 15-20 balls (depending on the size you roll them into)

Coconut for rolling ( I omitted this step.)
In a food processor, combine walnuts, pumpkin seeds, cocoa, and ProPeas; process until combined walnuts and pumpkin seeds have broken up.   Add the fresh pitted dates and process again so that the mixture starts coming together into a ball.  You may need to add a touch of water to get the mixture into this consistency; roll into balls and then into coconut.  Keep refrigerated and enjoy for up to two weeks.  I  put these in the freezer and they were still soft enough to bite into!

Here Comes the Sun

3 medium oranges, tangerines, or tangelos, peeled and sectioned
3 medium carrots
1 ripe, medium papaya, seeded, flesh scooped out

Watermelon Cooler
(a.k.a. Virgin Pink Mojito)

4 cups cold, seedless watermelon, roughly cut into 1-inch chunks
Juice of 1 medium lime (about ¼ cup)
1 tablespoon raw honey or agave nectar
5-10 fresh mint leaves
2 mint sprigs for garnish (optional)

Post-Workout Replenisher

3 medium apples, including cores
3 medium carrots
2 stalks celery

(1) Juice the oranges, carrots, and papaya together.  For this recipe you do not need to us a separate citrus juicer for the citrus fruit – just toss it in with the other ingredients.
(2) Stir to blend before consuming.

Yield:  2 servings

A good source of: vitamin C, folic acid, carotene pigments, potassium, calcium, natural sugars, and enzymes

(1) Place the watermelon, lime juice, honey, and the 5-10 mint leaves in a blender.  Liquefy until smooth and the mint leaves appear as tiny specks, about 30 seconds.
(2) Pour into two beautiful glasses with or without crushed ice.  Garnish glasses with fresh mint sprigs, if desired.

Yield: 2 generous servings

A good source of: potassium, vitamin C, beta-carotene, and the cancer-fighting carotenoid lycopene

(1) Juice the apples, carrots, and celery together.
(2) Stir before serving.  Pour into glasses and enjoy!

Yield: 2 servings

Vegetable Brain Blast

3 medium apples, including cores
3 medium carrots
1 medium cucumber
4 teaspoons barley grass or wheatgrass powder

 

Cool Ice Cream Treats To Beat

Basic Banana Ice Cream

3-4 medium bananas, unpeeled and frozen
2 waffle cones
Assorted toppings: nuts, mini chocolate chips, sprinkles, etc. (optional)
Basic Fruit Ice Cream
2-3 medium bananas, unpeeled and frozen
½ cup frozen berries: strawberries, blueberries, blackberries, raspberries, etc.
½ cup frozen favorite fruit: pineapple, peaches, grapes, mango, papaya, etc.
3-4 waffle cones & toppings (optional)

(1) Juice the apples, carrots, and cucumber together.
(2) Add 2 teaspoons of your chosen grass powder to each glass of juice and stir vigorously to blend.

Yield: 2 generous servings

A good source of: antioxidants, chlorophyll, potassium, calcium, silicon, trace minerals, and natural sugars.

 

The San Antonio Summer Heat

(1) Place frozen bananas in a blender or Champion juicer (with blank screen on).
(2) Blend bananas until texture is smooth and creamy.
(3) Hold waffle cone and scoop or “catch” banana ice cream into cone.

Yield: 2 generous servings

(1) Cut frozen bananas into chunks and place in blender or Champion juicer (with blank screen on).  Add frozen fruit in equal amounts.
(2) Blend all fruits until texture is smooth and creamy.
(3) Hold waffle cone and scoop or “catch” fruit ice cream into cone.

Yield: 3-4 generous servings

 

Vegetarian Chili

1 small eggplant, peeled and diced

1/2 tsp. sea salt (may be omitted)

1 1/3 cup extra-virgin olive oil

1 small yellow onion, diced

1 small green bell pepper, diced

1 small red bell pepper, diced

1 1/2 tsp. garlic, chopped

3 1/2 cups crushed tomatoes with juice (28 oz. can of tomatoes works well)

3/4 Tbsp. chili powder

1 tsp. oregano

3/4 tsp. black pepper

3/4 tsp. fennel seed

15 oz can pinto beans, rinsed and drained

1 1/2 Tbsp. dill

1 tsp. ground cumin

1 1/2 tsp. basil

3 Tbsp. fresh parsley, chopped

15- oz. can chickpeas, rinsed and drained

Place diced eggplant in colander and sprinkle with sea salt. Let stand 1 hour, and then pat dry. Heat oil in stockpot. Add eggplant, onion, peppers, and garlic; saute until tender.  Add rest of ingredients and simmer for 45 minutes. Note: spices and herbs, except parsley, are dried.

Divinely inspired: Eureka!

Steam 4 sweet potatoes (2 organic and 2conventional) in jackets until soft, but firm. Peel, cube into casserole dish.

Take sweet potato water (juice) add thickener (tapioca or corn

starch or potato flour) and either 2TBSP butter, coconut or grape seed oil and stir over medium heat in saucepan until thick.

Cut 1/4 c fresh pineapple, and 1/4c papaya into small bits, mix in 1/3 cup whole pecans -Mix with sauce and pour over sweet

potatoes. Simmer or bake in low oven for 10 to 15 minutes.
