Spring Salad

Spring cleaning for the body – here is an easy recipe to support your liver with a yummy salad. Beets are great for the liver and cooked ahead of time make for a quick side dish or main salad for lunch. Chop and either mix with or put on top of chopped apple. Add some goat feta cheese and a drizzle of:
Rica’s Signature Honey Mustard Dressing
Put in a blender:
2-3 garlic cloves
2/3 cup apple cider vinegar
2-3 heaping tsp Dijon mustard (or more to taste)
1 tsp salt
2/3 cup honey
1-3 tsp turmeric – I usually use 1 TBSP
Blend; then slowly pour in (on low) 1-2 cups olive oil. Adjust to your tastebuds and enjoy. Store in a mason jar. Keeps well in the fridge for at least a couple of weeks. Bon Appetit!
