Gluten Free “Orange Christmas Doodles” cookie recipe

I adapted this recipe from a Snickerdoodle recipe I found online.  They had adapted it from a snickerdoodle recipe found on the Gold Medal all-purpose flour package. Even if you don’t need to eat gluten free you will love these cookies.

Gluten Free Christmas Doodle

Ingredients

Gluten Free Christmas Doodle

1 1/2 cups sugar (I use all natural Morena pure cane sugar)

Zest from one large orange
1 cup (2 sticks) unsalted butter, softened (I used salted butter because that is what I had.)
2 eggs
2 tablespoons freshly sqeezed juice from the orange
2 3/3 cups AIM Gluten Free Flour
2 teaspoons cream of tartar
1 teaspoon baking soda
1/4 tsp salt

  Cinnamon, Clove Topping
3 tablespoons sugar (or xylitol)
1 tablespoon cinnamon
1/2 teaspoon ground cloves

Directions

Heat oven to 400
Combine sugar, butter, orange zest, orange juice and eggs in a large bowl. Stir in the flour, cream of tartar, baking soda adn salt.

Shape the dough by round teaspoons into balls (I made mine larger).

Combine the topping ingredients in a small bowl. Roll the ball in the mixture. Place the balls about 2 inches apart on an ungreased cookie sheet, lined with parchment paper.

Bake the cookies until they are golden, 8-10 minutes. Immediately remove them from the cookie sheet. Cool completely on a wire rack.
