Have you ever wanted to make a cake but didn’t have any eggs?  Have you ever tried “Wacky Carob Cake” from the La Leche League’s 1981 cookbook “Whole Foods for the Whole Family” .

I believe you are in for a treat.  Even if you don’t have any eggs you can make this cake.  My family really loves this recipe and my husband wonders why I don’t make it more often.  They like to call it Mom’s Carob Brownies.

What you need:  8” square pan (I use a 9”x13” pan because I double the recipe). Of course you will need measuring spoons and cups (this recipe was written for your kids to help).  Spoon or fork, knife, toothpicks, cooling rack, and potholder and/or oven mitts.

Wacky Carob Cake (mix and bake in the same pan) I can hear someone ask, “Do I have to use carob?  Can I use chocolate?”  Yes, you can use chocolate, preferably dark chocolate (dark chocolate is better for you). (The reason I am so wacky about carob is because I cannot eat chocolate).

Ingredients:  1 ½ C. whole wheat flour (pastry flour preferred) I just use regular whole wheat.   1/3 C. honey or ½ C brown sugar,  1 tsp. baking soda, ½ tsp. salt, 1/3 C. carob powder, 1 tsp. vanilla, 1 tsp. vinegar, 1/3 C. oil (I like to use coconut oil because it is good for the body), 1C. water,  ½ C. raisins (optional), ½ C. nuts, chopped(optional),  (Another optional ingredient I like to use is carob chips about half a bag).

1. Pre-heat oven to 350 degrees F.  2. Combine dry ingredients in ungreased pan.  3. Add vanilla, vinegar, oil, honey and water.  4. Blend well with fork, scraping sides to be sure that all the flour is mixed in.  5. Stir in raisins and nuts, if you like.   6. Put in oven and bake for 25 to 30 minutes or until toothpick inserts and comes out clean.  8. Let cool before you cut it.

The cook book has questions you can ask if you have a child as your student: Can you:      Turn on oven?  Use measuring cups and spoons?  Chop nuts?  Mix ingredients in pan with fork or spoon?  Set timer?  Put cake in oven?  Remove from oven using potholders or oven mitts?  Cut cake in pieces when cool?

This recipe is fun to make especially with your kids!
