Recipe: Gluten Free Applesauce Muffins

Morgan my teenage son is involved in running.  This fall season he ran on his Cross Country team where there are several young people who are gluten intolerant.  After practice on a lot of  Saturdays they would have a picnic brunch.  One of these Saturdays I decided I wanted to give these kids something to eat besides just bananas, grapes, or strawberries (which are real good for them).  But I wanted to give them something they could enjoy eating along with the fruits that were available.  So I came up with this recipe that starts with AIM’s Gluten-Free Waffle & Pancake Mix

Gluten-Free Applesauce Cinnamon Mini Muffins

1 package Aim’s Gluten-Free Waffle & Pancake Mix(it is about 4 cups)

1/2 tsp baking powder

2 tsp Aluminum free double action baking powder

1/4 -1/2 tsp sea salt

2 tsp cinnamon

5 Tbsp.packed brown sugar or raw honey melted

1 tsp apple pie spice

2 scoops AIM’s ProPeas Protein Powder

2 Tbsp AIM’s Fit’n fiber

1/4 cup coconut oil melted but not hot

1 cup Applesauce

1 & 1/2 cups coconut/almond milk or water(do not use regular milk)

Mix dry ingredients together in a bowl. In a large bowl beat eggs coconut/almond milk or water applesauce and coconut oil.  Pour dry ingredients in wet ingredients and mix to moisten dry ingredients.

Line mini muffin pans with mini baking liners and bake at 425 degrees Fahrenheit for 8 -10 minutes or till slightly golden.  Makes about 60 Mini muffins.

The kids even ones who aren’t gluten intolerant enjoyed the muffins.  In fact the rest of my family loved the ones that were left over from the picnic.
