Broccoli Salad … a delicious, filling favourite.

I have come to love my broccoli salad, and my husband has too. It is sweet, but not too sweet, filling, and delicious.

Whenever I would go to parties and there was broccoli salad, I would enjoy it, but knew it cost me calories galore with all the bacon and the cheese and mayonnaise, but more than that, a lot of those fats are simply not beneficial for my body. they cause inflammation and this shows up in the forms of aches and pains, anxiety, depression and tiredness.  So this version adapted from Celeste Davis’s creamy broccoli salad in her Wonderfully Well book, page 208.  is just as good and beneficial.Find the book at www.thewellnessworkshop.org 

I am going to a party this coming Sunday and I know that the menu is lasagna, salads and ice-cream cake. Now I cannot eat the lasagna, so I have asked ahead for a half cup of the sauce to be kept aside for me… I shall take a bowl of gluten free pasta or spaghetti squash or rice or potato (sweet potato would be a great option). I want to be able to eat!

I have offered to take a salad and will make a nice large broccoli salad so that I can fill up on that and I will prepare myself mentally that I cannot eat the ice-cream cake and possibly take along some coconut ice-cream to eat or some crushed frozen fruit with a little almond milk in it… a perfect alternative.

There is so much to be said for preparing not only the food, but the mind, ahead of the time. Do it… it really works.

So here is the Broccoli salad:

About 4 cups broccoli florets cut small, plus peeled, chopped stalks

Half a cup of raisins, or dried cranberries or cherries (or a mixture)

Quarter cup cashew nuts, or sunflower or pumpkin seeds.

In a jar put 3/4 cup Vegenaise

2 Tablespoons raw local honey

Juice of half a lemon

A Tablespoon of water to help honey not to clump

Put the lid on and shake and pour as desired over the broccoli.

Enjoy!

I have found that I prefer to make some of the dressing and keep it in the fridge ready to pour on the rest of the ingredients so that the salad is freshly made each time I eat it.
