Oh My Gosh, it’s Good! Coconut Almond  Fudge.

How sweet are your words to my tastesweeter than honey to my mouth!

It was hard for me to believe that I could eat this on my cleanse! Seriously… I could and I did! My family began to love this even more than chocolate and I want to experiment with adding other things to it such as peppermint, or orange essence.

The biggest problem with it is that it melts really fast and does not travel well.

Prep time: 10 mins Cook time: 1 hour Total time: 1 hour 10 mins

Don’t eat more than one a day and do it in place of one of your good fats like coconut oil or an avocado. This is a great way to get coconut oil daily, good for your brain. It tastes like the coconut candies you get in the assorted boxes of chocolates or a really good mounds bar. I prefer using crunchy almond butter for this one. The raw chocolate makes it out of this world but if you don’t have that or need to save $$ use a good cocoa like the red one from the Bulk Barn.

 

Ingredients

½ cup coconut oil, organic & cold pressed

½ cup raw or roasted, crunchy or smooth almond butter, (sunflower seed butter works well too.)

2 Tablespoons raw or good cocoa powder

2 Tablespoons raw honey

1 teaspoon organic vanilla extract

 

Instructions:

Put all the ingredients into a sauce pan on a low heat & stir until melted & well blended

Line a loaf pan (or a larger pan if you want smaller pieces) with parchment paper OR use a silicon candy mould or ice-cube tray

Pour melted mixture into pan and freeze for an hour or until firm but not frozen hard

Turn onto a cold cutting board & cut into 20 pieces (I do 40 or 60) OR pop them out of the mould

 

Store in a sealed container in the refrigerator or freezer for up to one month.

 

Notes

This should be used in place of a healthy fat if you are inactive or trying to lose weight. If you are an athlete it would be perfect to pop in your mouth before training or an event for extra energy. Coconut oil melts at room temp so these should be consumed immediately. Keep refrigerated.
