Soups I have made…

and nourishment to your bones.

Soup… I love soup, even on a hot day! but on a cold or cooler day it is delightful how it goes from my mouth, down the oesophagus and into the stomach. Yum! Warming and satisfying.

And home made soup is even better! No preservatives, not too much salt, good quality ingredients, not over cooked. Great for the heart and soul and body.

Here are 2 recipes that we have in our home reglarly…

Cauliflower Soup

1 medium onion

1-2 cloves of garlic

1 TBSP grape seed oil

1 tsp nutmeg

1/2 cup almond milk  or other milk of choice (optional)

1 organic stock cube (vegetable or chicken)

1 cauliflower (organic preferable)

about 4 cups boiling water

Salt to taste.

Fry the onion and garlic in the oil for a few minutes, till translucent.

Add the stock cube, nutmeg, chopped up cauliflower and the boiling water. (adjust according to size of cauliflower)

Boil for about 10 minutes and liquidize with hand blender.

See on the right one of the ways I served my soup… different freshly picked raw herbs on top… Nasturtium, leaves and flowers, Arugula, and Chives, leaves and flowers.

Red Lentil Soup

2 cups red lentils (rinsed)

1 medium onion (I also use dried onion flakes, 1 TBSP)

1-2 cloves of garlic

1 TBSP Cumin

1 Stock cube or salt

About 5 cups boiling water

Put all the ingredients into a pot and bring to the boil. Let it simmer for about 15 minutes, till lentils are soft and fallen apart.

Serve hot. Goes well with the nutty lentil burgers or a nice big salad. Once I put chopped up broccoli in it, so good on a cold day when you are trying to get in 75% raw!
